Easy Dinner Idea: New Orleans-Style


In honor of Mardi Gras, I thought I'd share a super easy dinner idea with you.  I discovered Blue Runner Beans when I was in college and our beloved sorority mom, Mama Pat (from south Louisiana), made this for us.  These beans are really good - you can't just buy any old can of red beans, you HAVE to get these beans.  I used to have people buy them for me when they went to south Louisiana, but now they have them in our Wal-Mart.  It makes it sooo good when you sprinkle it with the red wine vinegar.  Yummy!

Ingredients:
1 teaspoon minced garlic
1⁄4 Stick of Butter
2 Cans of Blue Runner Creole Cream Style Red Beans or White Beans
Smoked Sausage link or Andouille
Salt and pepper (season to taste)
Red Wine Vinegar

Directions:
Slice the sausage into bite-size pieces and sauté it with the garlic and butter in bottom of pot until your sausage (about 5 minutes).  Add the two cans of Blue Runner Red Beans and stir with a reduced heat. (Do not over heat as beans will scorch and burn on bottom) Serve over rice.  Top off your bowl with red wine vinegar to taste.

This is Janna Moree's sister-in-law. You are so right about Blue Runner beans! I live in Gonzales - where their plant is located. They are seasoned well and are creamy. They are the only beans I like for Red or White Beans. Zatarains makes good beans for chili. I haven't tried the red wine vinegar. I will try that next time.
